I saw this recipe on Paula Deen's show on the Food Network today. I haven't made it yet but it looks wonderful & I want to try it.
Peanut Butter cookies
1 cup peanut butter
1 cup Splenda
1/2 teaspoon vanilla flavoring
1 egg
Blend with fork until well mixed, roll into balls & bake on cookie sheet for 12 minutes at three hundred fifty degrees. You can make criss cross marks in the cookies before baking with a fork dipped in Splenda.

Does anyone know the name of that group of older folks that go around to prisons & such & sing for them? They've become quite popular, & there has been a documentary made about them. They sing rock songs, like Springsteen & Queen. If you can tell me their name or the name of the documentary I'd appreciate it!! Thanks in advance.
they just played a promo for Martha Stewart's new fall season...they used the song "Pour Some Sugar On ME" & showed her making desserts. At the end she smiles & says, "Sweet!" It was TOO funny!
so freaking off tomorrow! thank heavens. today was so, so, so busy, i didn't get out of there until after 2:30-i was so exhausted i took a nap when i got home; didn't even turn on the tv, just threw off my scrubs and threw myself into the bed. felt a lot better for it, although i'm still tired. T had just come in to tell me it was 4:30, and i was sitting on the side of the bed trying to find my glasses, and the phone rang. it was my old friend AJ who used to live across the hall from us when we lived in the apartments. he sort of became like an adopted nephew to T and i, he ate supper with us 5 out of 7 nights sometimes, and usually fell asleep on our couch. this was when i was in nursing school and my car broke down, he was like an angel sent to help me because between him and Mama, they always made sure i got to class or clinicals or wherever i needed to be for about four months. they saved my life. anyway, he's in town for a couple of days, so tomorrow we are going to have lunch and he's going to come over and see the new place and meet Pumpkin. *excitement abounds* heh.
it's time to do my hair color again. one of my aides came up to the desk today and said, 'Judy, i didn't know that you have gray hair!' i'm like, 'dammit, you can see my roots, can't you!' heh. i've been putting it off, just haven't had the energy lately. i'll probably do it this weekend. my hair is getting really long again. it's almost to my shoulders. and when i say really long that's compared to the fact that when i cut it all off last summer it was only about an inch long all over my head.well, at least Walgreen's has the color and highlights that i like on sale 2/$10 right now. they also have wet n wild makeup buy one get one free. i got a new lipstick and nail polish.
speaking of nail polish, i got a new set of nails on Monday with part of the Christmas money that my folks gave me. had of course an altercation at the salon. i'm never going back there! the guy that was working on me made a big deal out of taking off my old nails, i told him just to take them off with an acrylic nail (that's what they've always done before) and he's like, no, no! that will hurt you! he finally did it. he kept stopping to go work on this other lady that had her own tech, i guess he was new because she kept stopping my guy and having him come over there, and there i'd sit. finally the THIRD time she did it, she said, 'i'm in a hurry and i don't have a lot of time' and i looked at her and said, hey! neither do i! when she left she glanced at me and said, 'sorry, ma'am' and i said, 'whatever'. i am usually not like that, but she was rude and mean. and THEN she came back 2 more times after she left to make them take the Christmas trees off her nails and then back again because she messed one of them up. geez. anyway, i picked what looked like dark red in the bottle but it turned out pink and i wanted red for Christmas. that's why i ended up going to Walgreen's last night for the polish. i redid them myself. now they look fabulous. yeah, yeah, i'm vain and that's piddly....ah, well.
didn't even cook tonight, i heated up homemade potato soup from the freezer and made sandwiches. i guess it did the trick because now T is asleep on the couch. and i'm off to do my last house call. i hope all of you have a happy Friday!

Happy Thanksgiving my friends. *hugs*
feeling a little restless right now...trying to keep busy. i never did make it to bath and body; i spent all my time at Big Lots! they had lots of Halloween goodies. i didn't spend too much. i got some little knickknacky things that i am planning to send to a friend of mine this week *giggles*. to go with some things that i already had. saw T, came home. worked on the bedroom some and started a load of laundry. it's in the dryer now. painted my fingernails a dark purple, very shiny. i did that while i talked to mama on the phone. also talked to Robbie. they had been out looking at rent houses and came back discouraged because they didn't find anything that would nearly remotely do for them. i found something at Big Lots that i want VERY BADLY. it's an outdoor firepit. it's BLACK with crescents and stars cut out all over it! how fun to have a firepit in the backyard and roast marshmallows on it! but it's close to a hundred bucks, no WAY is that in the budget at present. sure would be groovy though. my friend at work got me a greenman wall plaque for a housewarming present. i hung it in the bedroom, in the middle of the trellis thing. it looks pretty cool, kind of like a guardian thing going on. T was laughing the other night because i had hung the trellis on the wall that is at the foot of our bed. it's the only wall in that room that is big enough. the trellis has a big pointy fleur-dis-lis (sp) at the top of it. he made the remark that 'all we need is a pissed-off spirit to hurl that thing off the wall and BOING! we're gouged with it!' he has a worse imagination than i do sometimes. it's starting to get dark so i must remember to plug in the Halloween lights outside. it's so fun to have a house. sometimes. it seems like this organizing/getting everything in its place is going more slowly than i would like, though. all in good time, i suppose. they've already got Christmas stuff out at most of the stores now. it shouldn't surprise me anymore. i always realize that as soon as Halloween is over-BOOM! Thanksgiving and Christmas are upon us. my boss/friend said last week that we aren't going to buy presents for each other again this year, we will just all go out to dinner or drinks together instead. fine by me! that means the only ones i'll need to buy/make for at work are Robert and Leanna. and i always get my med aides a little something. that'll be a piece of cake. i'm thinking about selling Pampered Chef Products. i love that stuff, and i've always been interested in doing it. i'm going to talk to a new friend about it this coming week. i think it would be fun. i'd have to do parties after seven or on Saturdays, though. i know, i know, that's what i need-another job! heh.

Chick Pea Croquettes (Falafel)
from the Weight Watchers 365-Day Menu Cookbook
*makes 2 servings
12 oz drained canned chick peas (garbanzos)
3 T plain dried bread crumbs
1/2 garlic clove, finely chopped with 1/2 t salt
1/4 t each basil leaves, ground marjoram, and thyme leaves
1/4 t hot sauce
dash ground red pepper
cilantro to garnish
1 c plain unflavored yogurt
Preheat oven to 350 degrees. In blender container or work bowl of food processor process chick peas until finely chopped. Transfer to bowl. Add remaining ingredients except yogurt; mix well, making sure seasonings are well distributed. Spray baking sheet with nonstick cooking spray. Shape mixture into 10 balls. Place on baking sheet and bake 13 minutes. Garnish with cilantro and serve with yogurt.
per serving: 308 cal; 17g protein; 7g fat; 46g carbs; 675 mg sodium (sodium data unavailable for chick peas)
